Over two decades later, that's exactly what we still do, every single day. Our dough is hand-tossed fresh each morning. Our San Marzano tomatoes are imported from the volcanic soils of Southern Italy. Our mozzarella is pulled daily. And our wood-burning oven — the beating heart of this kitchen — hasn't missed a shift since we opened. We've grown into three locations across Brooklyn, Manhattan, and Queens, but the soul of this place hasn't changed.
